The kitchen works organic produce brought down from the Albanian Alps into the dishes of the northern uplands, then sets them beside a lighter Mediterranean line rather than serving the mountains straight.

The room carries the same idea: timber and stone from Valbona, and craft pieces from Zadrima, Kruja and Korca. It sits in the centre next to an eighteenth-century Ottoman crossing over the old riverbed, so the structure outside is as old as the recipes inside, a pairing the capital can offer in very few other rooms.
